Cocoa, maple syrup, and cardamom shine in this flavorful overnight oats dish. Enjoy for breakfast or as an afternoon snack when you need a flavorful pick-me-up. Fresh raspberries add a sweet zing while cocoa nibs and chopped hazelnuts add crunch to this easy dish, but don't let that stop you from experimenting with your other favorite toppings! Simply mix everything together and toss in the fridge for a super easy snack.

Ingredients

  • 2 cups unsweetened almond milk

  • 1 cup uncooked old-fashioned regular rolled oats

  • 2 Tbsp.s unsweetened cocoa

  • 2 Tbsp.s chia seeds

  • 2 Tbsp.s pure maple syrup

  • 1/2 tsp. ground cardamom

  • 1/2 tsp. vanilla extract

  • 1/4 tsp. kosher salt

  • 2 cups fresh raspberries, divided

  • Toasted chopped hazelnuts

  • Cacao nibs


Directions

Stir together almond milk, oats, cocoa, chia seeds, maple syrup, cardamom, vanilla, salt, and 1 cup of the raspberries in a large bowl. Divide evenly among 2 (16-ounce) bowls or jars. Cover and refrigerate at least 8 hours or up to 12 hours. Top evenly with remaining 1 cup raspberries; garnish with hazelnuts and cacao nibs.
